XO Rice Krispies

Hey y’all so that special time of year is coming and for all of you who are excited for Cupid and all the love and romance he brings, I have a recipe you’ll love. It’s super easy and super cute, making it perfect for Galentine’s Day, a romantic date night, or preparing a snack for the kids’ school. XO Rice Krispies are a delicious and fun treat anyone will love.

You’ll Need:

Pink and/or red food coloring

1 box Rice Krispies cereal

1 bag of marshmallows

XO cookie cutters (Not necessary, you can form these by hand)

How To:

  1. In a medium sprayed or buttered sauce pan, melt the marshmallows over low-medium heat until fully melted.
  2. Add in the box of cereal.
  3. Mix well.
  4. Spread out into a wax-paper lined pan.
  5. Use cookie cutters or your hands to create XO shapes.
  6. Enjoy!

Pace Yourself on Holiday Treats

The holidays are officially here and I know one of the biggest downsides, and biggest upsides, is that it’s cookie season. I am an avid baker, and I love trying new recipes out, which means I also looove eating cookies. Unfortunately, that’s not the best choice when it comes to healthy eating, so this means falling back on my favorite thing. Moderation.

Everything in moderation is my standard for things. I don’t overindulge, but I also don’t restrict myself to where I won’t have a piece of chocolate cake if I want it. However, I do have to exercise a bit more self control during Christmas cookie times because those are so delicious. Just make sure to pace yourself. Set yourself a limit and enjoy only a few a day, and make sure you have other healthy snacks in there too. There’s no harm in helping yourself to an extra cookie or two if you can balance it out.

One thing I like to do is pick and choose where my sugar comes from. If I go to Starbucks that day, I avoid the extra sugars elsewhere like in desserts, because I know that White Chocolate Mocha or Peppermint Mocha I love so much is loaded with sugar. However, if I’ve been having unsweetened herbal tea and water, then there is no reason for me to refuse the dessert menu or not help myself to a couple of cookies from the tray.

Another option is to lower the sugar count in your cookies. There are so many recipes out there and it’s easy to do. Another thing I like to do is increase the flour while decreasing the sugar. You get fluffier cookies, and the sweetness really doesn’t change.

Mint Chocolate Cookies

I can’t wait to get started on cookie baking this weekend, and this is one of the first recipes I am going to try out.

You’ll Need:

  • 2 1/2 cups of flour
  • 2/3 cup cocoa
  • 1 teaspoon baking soda
  • 1 cup butter, softened
  • 2/3 cup granulated sugar
  • 2/3 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 bag of dark chocolate and mint morsels

How to Prepare:

  • Preheat oven to 325 degrees.
  • Combine flour, cocoa, and baking soda in a small bowl.
  • In a larger bowl, beat butter, both sugars, and vanilla until creamy.
  • Add in eggs one at a time, beating well after each addition.
  • Slowly add in flour mixture.
  • Add in morsels
  • Drop rounded tablespoons onto a cookie sheet lined with parchment paper.
  • Bake for 11-13 minutes or until cookies are puffed and centers are set.
  • Put on a wire rack to cool and enjoy!

No Bake S’mores Bars

This easy no bake s’mores bars recipe will have you feeling like you’re outside near a campfire in no time.

Everyone always says s’mores are a summer snack, but to me, they’re a winter snack. That’s when you’re out sitting by the fire with friends and family, so I always associate them with this time of year.

You’ll Need:

  1. 1 whole stick of unsalted butter, softened
  2. 1 cup brown sugar, packed
  3. 1 teaspoon vanilla extract
  4. 2 cups graham crackers, crumbled into small pieces
  5. 1 cup all-purpose flour
  6. 1 teaspoon sea salt (I usually use less salt in my recipes and would take this down to 1/2 teaspoon)
  7. 1 can condensed milk
  8. 1 1/2 cups of chocolate chips
  9. 1 1/2 cups of mini marshmallows
How to Prepare:
  1. Line a 13-x-9-inch baking pan with foil or parchment and spray lightly with nonstick spray.
  2. In a large bowl, beat the butter, sugar, and vanilla until light and fluffy. Beat in the graham cracker crumbs, flour, and salt. Beat in the condensed milk. With a wooden spoon, stir in 1 cup of the chocolate chips and 1 cup of the marshmallows.
  3. Transfer the mixture to the prepared pan and use a spatula to press into an even layer. Sprinkle the surface with the remaining chocolate chips and marshmallows, pressing gently. Cover with plastic wrap and chill until firm.
  4. Enjoy!

 

Mug Cookie

I don’t about y’all, but some nights I just want a big warm cookie. Buuuuttt, I know if I make a whole batch, I’ll eat way more than I should or have to toss some. So rather than waste ingredients, try the mug cookie!

You’ll Need:

  • 1 tablespoon butter, softened
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar, packed
  • 3 drops pure vanilla extract
  • 1 egg yolk
  • 1/4 cup flour
  • 1/8 teaspoon baking soda
  • a handful of chocolate chips

To Prepare:

  • Mix all your wet ingredients and sugars together in a large mug.
  • Add flour and baking soda and mix in.
  • Stir in the chocolate chips.
  • Microwave for one minute. Check beginning at 40 seconds, as some microwaves can cook faster than others.
  • Enjoy!

It’s simple, delicious, and prevents you from having to make a whole batch of cookies when you really only need one.

Pumpkin Zucchini Chocolate Chip Bread

You’ll Need:

  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 3/4 cup canned pumpkin
  • 1 cup shredded zucchini
  • 1/3 cup honey
  • 1 egg
  • 1 tablespoon olive oil
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

How to Prepare:

Preheat oven to 350 degrees and spray a bread loaf pan with nonstick cooking spray.

In a bowl, whisk together flour, baking soda, salt, nutmeg, cinnamon, ginger, and cloves.

In another bowl, combine pumpkin, zucchini, honey, oil, egg, and vanilla until smooth. Add in almond milk.

Add wet ingredients to dry ingredients and stir until combined.

Add chocolate chips.

Bake for 50-60 minutes or until toothpick inserted in center comes out clean.

This is super easy prep, and will make a delicious fall-themed snack that is perfect for an afternoon party or mid-morning snack with your cup of coffee. Not to mention, it’s got some veggies right in it!

 

Rum Balls

Enjoy this boozy treat 🙂

You’ll Need:

4 cups graham cracker crumbs

1 cup nuts finely chopped

1 1/2 teaspoon cinnamon

1/2 teaspoon ground cloves

1/3 cup light Karo syrup

1/4 cup rum

Prepare:

Stir everything all together, create little balls, then roll in powdered sugar.

Red, White and Blue Cake

To create the perfect red, white, and blue cake for your Fourth of July festivities, I have a super easy recipe for you!

You’ll Need:

1 vanilla cake mix (you can make your own, but if you’re juggling event prep too, this is much easier.)

1 tub of whipped cream

1 cup of sliced strawberries

1 cup of raspberries

1 cup of blueberries

How to:

  1. Prepare the cake mix as directed in a rectangle cake pan, and let cool.
  2. Once cool, apply whipped cream to top of cake
  3. Add blueberries on left hand side, creating a pattern like that on the flag.
  4. Use alternating strawberries and raspberries to create stripes.
  5. Enjoy your cake! Keep in the refrigerator if you aren’t serving immediately.

 

Easy Coffee Cake

For this easy coffee cake, you’ll need:

1 package of yellow cake mix

1 box of instant vanilla pudding (sugar free)

3/4 cup of water

3/4 cup of vegetable oil

1 teaspoon vanilla

1 teaspoon butter extract

4 eggs

Topping:

1/4 cup sugar

1/2 cup chopped nuts

2 teaspoon cinnamon

 

To Prepare:

  1. Blend first 6 ingredients together. Add eggs one at a time, beating between each egg.
  2. Mix ingredients for topping in separate bowl.
  3. Pour 1/2 of batter into greased rectangular 13×9 inch pan.
  4. Add 1/2 topping, then rest of batter.
  5. Sprinkle on remaining topping evenly.
  6. Bake at 350 degrees for 40 minutes.

Easy Fudge

This is faster than your average fudge y’all, but tastes great!

You’ll need:

1 14 ounce can sweetened condensed milk

3 6 ounce bags of chocolate chips

1 1/2 teaspoon of vanilla

1 cup of walnuts

A pinch of salt

How to Prepare:

  • Melt milk, chocolate chips, and salt.
  • Remove from heat
  • Add vanilla and nuts
  • Pour in 8 inch pan lined with wax paper
  • Chill for 2 hours
