This recipe is something my mom has made for years, and it is delicious. It takes a little longer, but is definitely worth it, and easier than you’d think.
- 1 large onion, chopped
- 1 teaspoon garlic powder
- 2 16 ounce cans whole tomatoes with juice
- 1 can Ro-Tel
- 3 tablespoons parsley flakes
- Rice (however much you want, the casserole makes 4-6 servings)
- 1/2 pound bacon (I prefer turkey bacon, but to each his own)
How to Cook:
- Fry bacon in skillet and drain, then set aside to cool and crumble into a small dish
- Saute onions in same pan until golden. Add garlic powder and tomatoes, Ro-Tel, parsley, and some pepper to taste. Mix well and simmer uncovered for 1.5 hours
- Prepare rice as usual
- Serve cooked mixture over rice and crumble bacon on top
Enjoy! This is a great recipe for fall, we’re getting into that cooler weather, and this will fill you up. If you prefer, make it vegetarian/vegan by removing the bacon 🙂
I don’t know about you, but I grocery shop at about three different stores to get the best deals, and get everything I need. If that’s the case, which from what I’ve heard from other people it is, just go ahead and do all your grocery shopping at once. Load up those reusable shopping bags, and just knock it out in an hour or two, then enjoy the rest of your day.
Start your day on a relaxing note, even if it’s just 15 or 20 minutes. Taking time to enjoy your coffee or tea will give you a few moments to yourself, and allow you to start the weekend on a positive note.
Every Friday, make a to do list of things you need to accomplish that weekend. Whether it’s wash the car or finish laundry or change your sheets, put it on the list, and then you can plan out some fun time, while still getting things done.
There’s no question, some days are harder than others, but one thing I love to do is unwind each day. Take an evening walk around your neighborhood or local park, and just enjoy nature. You’ll feel better in no time!

I know getting up and working out doesn’t sound appealing, but it’s so worth it, even if you just do a quick 20 minutes of cardio. You’ll get the blood pumping, and you may find you don’t even need coffee later.
I always have a giant to-do list in the morning, and the easiest way to cut down on it is to prepare certain things early. Get your coffee maker ready to go the night before, fill it up with water, load your coffee in, and get the cup or pot set under, so all you have to do is turn it on when you get up.
Mondays are hard, and we all could use something to make it a little easier, so give someone a compliment. You never know what another person is going through, and you never know how one little compliment can really make their day and make them feel better.

I am super focused on making some changes in my life for the better, and I’ve been taking the steps to do so, and the first one is reducing the amount of stress in my life. You know where stress comes in? When you are rushing each morning to get everything ready to go, and not be late to work. Or when you don’t have the time to exercise, because you put off stuff that you should’ve done earlier.
