Cajun Rice Casserole

This recipe is something my mom has made for years, and it is delicious. It takes a little longer, but is definitely worth it, and easier than you’d think.


  • 1 large onion, chopped
  • 1 teaspoon garlic powder
  • 2 16 ounce cans whole tomatoes with juice
  • 1 can Ro-Tel
  • 3 tablespoons parsley flakes
  • Rice (however much you want, the casserole makes 4-6 servings)
  • 1/2 pound bacon (I prefer turkey bacon, but to each his own)

How to Cook:

  • Fry bacon in skillet and drain, then set aside to cool and crumble into a small dish
  • Saute onions in same pan until golden. Add garlic powder and tomatoes, Ro-Tel, parsley, and some pepper to taste. Mix well and simmer uncovered for 1.5 hours
  • Prepare rice as usual
  • Serve cooked mixture over rice and crumble bacon on top

Enjoy! This is a great recipe for fall, we’re getting into that cooler weather, and this will fill you up. If you prefer, make it vegetarian/vegan by removing the bacon 🙂
